Current Go-To Breakfast
I workout in the mornings, so breakfast can be a bit of a rush for me. To make it easier, I’ve tried everything from overnight oats to meal prepping breakfast burritos and protein muffins. I tend not to eat oats anymore, as I found they irritated my digestive system. I go in stages where I really love something, so I eat it everyday. Then I’ll switch to something else and eat that everyday for a week. Breakfast is one of the only meals where I can eat the same thing for an entire week and not get sick of it. Is anyone else like that? Breakfast is also my favorite meal of the day, so a breakfast bar or cereal just isn’t going to cut it!
I’m by no means a food blogger, but I have found some staple recipes that really work for me. Lately I’ve been loving this breakfast sandwich. I make it as I’m getting ready, multitasking, anyone? I’ve also pre-made them on Sunday, wrapped them in foil and either frozen them or put them in the fridge. Then I simply heat them up in the toaster oven as I’m getting ready for work. Both options work! If you don’t have a toaster oven and plan to heat up in the microwave, do NOT wrap them in foil.
So what do I use:
- Trader Joe’s Sprouted 7-Grain Bread (this has been my go-to bread for over a year, store it in the fridge!)
- Sliced Turkey or Turkey Bacon
- Baby Spinach
- Egg
- Greek Yogurt or Avocado
- Trader Joe’s Jalapeno pepper Hot Sauce (Sriracha or your hot sauce of preference will work too. Use Trader Joe’s Everything but the Bagel Sesame Seasoning Blend if you aren’t into spicy foods!)
Sprouted 7-Grain Bread, Homemade yogurt, Hot sauce, and Everything but the Bagel Sesame Seasoning (This stuff is great and can be used on everything from avo-toast to cucumbers for a snack).
Heat your pan to medium, if you’re not using a non-stick skillet add a tiny bit of oil (I use olive oil or avocado oil spray). I put the turkey in first so it has ample time to warm up, plus I like mine with some color. Add your egg and cook it to your liking. Sometimes I fry it, and sometimes I make over easy. Throw some spinach in the pan last, so that it doesn’t over cook. While your spinach is cooking take your toasted break and spread your yogurt or avocado on one side of one slice, and sprinkle on your seasoning blend or hot sauce. Add your turkey, spinach, and egg, and voila! I use two slices of bread, but it’s just as good as an open face sandwich.
