Fit Foodie Finds – Instant Pot Protein Mac & Cheese

If you haven’t jumped on the InstantPot bandwagon yet, you need to.  For the last couple years I kept hearing about the Instant pot, and I honestly thought it was stupid. Then, on a whim, I bought one on sale and with a gift card last December. It has been AH-MAZING! I have made yogurt every single week since I opened the box. When I saw that one of my favorite food bloggers Fit Foodie Finds had a recipe for Instant Pot Protein Mac & Cheese, I had to try it out. Then, I made it for a second time.

What I like most about this recipe is it doesn’t take any fancy ingredients.  It’s stuff that I would typically buy anyway, besides the macaroni noodles.

I paired the mac & cheese with a turkey burger patty from Trader Joe’s, some steamed broccoli, and black beans.  I added a little hot sauce for the mac & cheese and spicy mustard for the burger. Am I the only one that thinks broccoli goes with mac & cheese like peanut butter and jelly?  I think my mom always made them together when I was a kid. It ended up being a super easy and quick meal.

 

Eating healthy doesn’t always have to be boring or plain. Spice it up every now and then!
