Protein Kodiak Cake Mug Cake

I’ve always loved pancakes and waffles, but I’ve always made them from scratch.  Every time I go home my mom makes homemade buttermilk waffles. I tried Kodiak cakes about year ago, and they were good, but as pancakes and waffles, they just aren’t as good as homemade. What is though? I have, however, found the best use for Kodiak Cake Flapjack mix, mug cakes! This is the best snack, and I’ve even eaten it as my breakfast! It’s not super sweat, but a nice treat. My favorite combination is the peanut butter mix with my Orgain Peanut Butter protein!

Ingredients

  • 1/2 cup Kodiak flapjack mix (flavor of choice, peanut butter is my favorite)
  • 1/4 teaspoon Baking Powder
  • 1 scoop Protein Powder
  • 1/2 cup Milk (I’m using coconut or cashew these days)

Extras: Cinnamon, chocolate chips, dried fruit, peanut butter powder, vanilla extract, molasses, coconut flakes (anything you want to add!)

You can also use 1/4 cup mix and 1/4 cup milk if you want a smaller snack (I normally make it this size!)

Mix dry ingredients together, and then add milk. Stir until mixed thoroughly. I don’t normally measure my ingredients, and rather just dump them into the mug and mix until I get the consistency that I want.  I did test the recipe a few times though to make sure I got the right proportions for you. You want the mix to be a little bit thicker consistency than your average cake batter, and to slide off of a fork.  If it’s too thin it won’t cook correctly!

Place in microwave for 1 minute 30 seconds (will vary depending on microwave). Let cool and then enjoy!

I’ve had trouble with mug cakes not cooking properly in the past, and this seems to be the most consistent method I’ve come up with. Plus the Kodiak mix works amazing and tastes great!
