Backyard BBQ Meal Ideas
With Memorial Day fast approaching you’re probably either having a backyard bbq or going to one. A bbq doesn’t have to be a reason to stress, it’s ok to enjoy yourself every now and then. There are so many options when grilling, from traditional burgers and dogs, to chicken, veggie burgers, and more. I’ve compiled some of my favorite sides for a bbq that can be made a little lighter with a few tweaks.
Pasta Salad – Yes I know this has a lot of carbs, but carbs are not the enemy, and it’s only a side dish. I make pasta salad with Trader Joe’s tri color noodles, but you can use any noodles that suit your fancy. I chop up onion, celery, carrots, and tomatoes. You can add any of your favorite veggies or beans/black-eyed peas for extra protein! I don’t use dressing on it, instead I use some olive oil, salt, and pepper. That’s it! You can top with feta or Parmesan if you’re feeling festive.
Fresh Fruit Salad (with or without homemade whipped cream) – Instead of some elaborate desserts, why not make a refreshing fruit salad. Use whatever your favorite fruits are or whatever you have on hand at home. I usually squeeze lemon or lime juice onto the other fruit once it’s mixed to help keep it from going brown. Another option is to not use banana, because they brown the fastest. For topping make some homemade whipped cream. Heavy whipping cream from the store is all you need! I add some of my homemade bourbon vanilla and put it in the mixer on high, you don’t even need sugar. You can also add some Greek yogurt to the whipping cream (before you whip it) to make it a little thicker and tangy-er. Another option is to make yogurt parfaits!
Baked/Grilled Sweet Potato Fries – Who doesn’t love sweet potato fries? Baking them or grilling them cuts down on the oil that you need to use.
Coleslaw/Potato Salad – Make both of these with a vinegar base instead of mayo or heavy base. It lightens it up on calories and it’s a little easier in the heat.
Spinach salad – Take your traditional spinach salad and add strawberries, blueberries, or any berry, for a twist.
Veggies and Fruit with Dip – Make your veggie or fruit dip from Greek yogurt instead of a standard dressing or cream cheese base. Serve it with some pita and fresh-cut fruit and veggies.
Homemade salsa is always a great option. You can get a serving or two of veggies while enjoying some delicious flavors.
Spring Rolls – Spring rolls are delicious and they are very light and filled with veggies. Who wouldn’t enjoy having a little something different at a bbq?
Most importantly, remember to enjoy yourself, it’s one day of the year and you are spending time with your friends and/or family. Don’t beat yourself up for indulging a little bit.
