Peanut Butter Chocolate Chip Muffins
Who doesn’t love the combination of chocolate and peanut butter? Honestly, people think I’m crazy, but I actually don’t like chocolate all that much. I’m willing to eat it with peanut butter though! Today I’ve got a recipe I’ve been working on for a little while. It’s my version of the perfect peanut butter chocolate chip muffins. It’s not too sweet, and it’s the perfect combination.
- 1/2 cup peanut flour
- 1/2 cup all purpose flour
- 1 tsp baking powder
- 1/2 teaspoon cinnamon
- pinch of salt
- 1 tsp vanilla
- 1/4 cup honey
- 1 egg
- 1 cup coconut milk
- 2 tbsp peanut butter
- mini semi sweet chocolate chips
- mix all wet ingredients together in a bowl
- combine dry ingredients
- add to wet ingredients
- stir until thoroughly combined
- mix in chocolate chips
- pour into muffin tray
- sprinkle addition chocolate chips on top
- bake at 350 for 25 minutes or until toothpick comes out clean
- you can substitute any milk for coconut milk
I use THESE silicon baking cups from IKEA and they are literally amazing. They are only $4.99 for a 9 pack, they make clean up a breeze, and they don’t stick to your muffins! If you don’t have an Ikea nearby, don’t worry, because you can find these at most stores these days.
I typically eat these as my morning snack, or evening snack, or anytime snack ;-).
