Pizza Egg Bake

Who says you can’t have pizza for breakfast? No one, literally no one says that. What’s better for breakfast than leftover pizza? There might be times when you’d like pizza, but you simply don’t have any leftovers! Well I’m here to save the day with this pizza egg bake recipe.

Ingredients:

  • 7 Eggs
  • 1/3 cup Coconut milk (or any milk of your liking)
  • Chopped Turkey Pepperoni – I used around 20-25 slices (you can use regular pepperoni too)
  • Chopped Mushrooms
  • Chopped Peppers
  • Cheese
  • Or Your favorite pizza toppings!
Pizza Bake

Instructions:

  • Beat the eggs and milk.
  • Add “pizza toppings” to 9″x9″ pan.
  • Pour egg mixture over toppings, and mix a bit (we’re getting really scientific here).
  • Top with cheese.
  • Bake at 350 F for about 20 minutes or until baked through.

Eat, enjoy, and repeat! I made this on Sunday and reheated in the microwave each morning and it was still delicious! Plus it can be doubled and baked in a larger pan if you’re having a bunch of friends or family over. Although it’s 2020, so maybe save this recipe for next year.
